Man I couldn’t believe a made a lot of thing that day for the party. I made shrimp in lemon-butter sauce, chicken fettuccine, tiny pecan tarts, red velvet cupcakes and individual cheesecakes. I made all the desserts a day before the party. Everyone loved the dessert, it was finished pretty quick. I should of doubled everything LOL. There wasn’t too many of us anyways.

The fight was kind of boring.. I stopped watching after maybe the first or second round hahaha. Well the recipes I used to make the food are below. I don’t want to post all as this will be the longest post ever hahaha.

1. Tiny Pecan Tarts
2. Red Velvet Cupcakes (it’s a cake recipe, just made it into cupcakes. Also for the frosting.. I made it both the filling & Frosting)
3. Individual Cheesecakes (I used a cheesecake pan instead of a muffin pan)
4. Shrimp in Lemon-Butter Sauce
5. Fettuccine Alfredo (I fried a few breast chicken, cut it up in small cubes than tossed it in with the fettuccine)

Oh I made the black wrapper that the cupcakes are in myself. It was pretty simple actually.

Things you need:
Martha Stewart Large Circle Cutter
Card-stock
Scissors
double sided tape

First I cut an 8″ circle then a 4″ circle without taking the circle cutter out. Next you take your scissors, the 8″ circle and cut it in half. Right now you should have 2 cupcake wrappers Take one of the wrappers and tape each end together. There you go… a cupcake wrapper I’ll post a MORE detailed instruction later on.

When the cake was baking I decided to make the fondant.. I should of made it ahead of time.. I didn’t think it will take awhile to make.. I don’t think I’ll make fondant again.. It’s a hassle.. I’ll probably will make it again.. but not all the time.. The fondant actually tasted real good..  my boyfriend and our son loved it..

It was my first time making it sooo.. It was kind of a disaster.. I was kneading it by hand.. So it was sticking to everything.. My hands, the bowl, the counter, etc.. I refrigerated it and when I roll it out.. It rolled out perfectly.. Once I put it on top of the cake it was tearing.. I don’t know what I did wrong.. Maybe I rolled it out to thin because the second fondant that I rolled out came out better than the first but it was still slightly tearing a bit.. I’m about to cover the NSX cake with fondant and I would hate for it to tear..

The first one was a diaster.. It was more open on the top. This one was slightly better..

It’s my first time decorating a cake.. Still trying to get use to it’s fun.. Hubby always complain “that’s gonna be hard” for you.. It’s not even hard to do.

Instead of using mini chocolate chips I just used the regular size one from Ghirardelli. I just put about 1 cup instead of 2.. They came out pretty good.. I might either ice them with royal icing later in the day if there is any left.. LOL..

I just made four letters.. Each letter is the first letter of my family.. The hubby is R.. My son is L, daughter is A and Me is M.. Suppose to be M.. I think it’s a W.. I grabbed the wrong one

I just rolled out my dough earlier and I must tell you I one VERY happy camper LOL.. My dough turn out perfect.. No more uneven dough. Last time I made roll-out cookies was on my son’s and daughter’s birthday party. It was horrible.. Some were thick, some were thin.. I didn’t like how it turned out.. I even too these sticks I found in my garage because I didn’t want my cookies to come out uneven..

Well it’s off to bed for me.. I’m letting my cookies chill in the fridge overnight… I started kind of late.. Well not really.. mixing all the ingredients too me like 2 hours to mix.. I still don’t have a stand mixer so I had to do everything manual Got to save me some money so I can get one.. Maybe I should ask hubby to get me one on my birthday LOL..

I think I might throw away one of my old sets.. I barely use it.. I only use the spoons.. I have the one thats cups on one side and on the other end it’s spoons.. I bought them years ago I think at Luckys or Safeway.. Can’t remember..

It was fast.. I ordered some on Thursday and some on Friday and it all came (except measuring soon, expected to arrive to the 18th of Feb.) the same time.. I guess they put my order together..

Business is not going great with the one in the Philippines.. My webstore is also not doing all that well..Maybe because I have not touched it like for several months already.. Just got busy with the two I guess.. I have not updated or anything.. I should it also needs some TLC from me too hahahaha.. And for our shop here in Oakland, CA is actually doing well because of a mechanic we let go and hire another one. He’s much better than the last. The is the NUMBER ONE business we need to concentrate more on. I would hate to those our auto service-repair shop. The hubby took at mortgage to pay the shop off.

I’m starting to cook-bake again. After my mother-in-law went back home to the Philippines I started to cook baking come maybe months later. I got back into baking after watching Cake Boss LOL.. I love that show.. Got into baking even more when started reading blogs from Sweetopia and SweetSugarBelle. I love how they decorate cookies.. Then when I saw Cake Envy.. I was like OMG I MUST do that LOL.. Mini Cakes..

I started baking since I was I think 16-17.. It started at school.. I took a class called I think “Foods I” I know it wasn’t Home Ec or Independent Living.. Well anyways I had so much fun baking I started to take classes that had to do with baking.. Maybe I should just become a baker-pastry chef LOL.. I should do what I love right? I tried accounting.. It started to get boring.. I wanted to try nursing.. Still want to do that.. Hospitals can’t get enough nurses right?

Well enough blogging for today.. My little monkey is out of school and should be home any minute. A school bus drops him home.

Well anyways I’m like super excited.. I just ordered my FIRST sewing machine from a seller at Pricegrabber.com.. I can’t wait to use it.. I bought tons of sewing patterns last week. I can’t wait to make my first project.. I still need to get a rotary cutter, self healing mat, sewing scissors and a pinking shear.. Well actually need a lot more items to get started..

I ordered the Brother CS-6000i and can’t believe I got such a good deal on it.. Hope it arrives soon.. Was kind of skeptical in ordering the sewing machine from this one seller on pricegrabber.com because the price was real low compared to others.. It’s was $129.99 + $10 to ship.. Well I bought it anyways.. Let’s just see if it arrives by next week

The seller has great reviews anyways.. That’s what got me to buy it.. If it didn’t have any reviews I would spent more and just get it from amazon.com
